But Brochu\u2019s was never meant to be about me cooking every plate. It was meant to be about building something that lasts.\u201d What lasts, it turns out, is also built by two people most diners never meet.<\/p>\n<p style=\"text-align:left;\">This is their story.<\/p>\n<p style=\"text-align:left;\">Brochu\u2019s is named after Andrew Brochu and his wife Sophie, but the kitchen belongs to Executive Chef Dave Baker and Executive Pastry Chef Georgia Vinzant Baker. They shape the food. They help set the tone. They are committed to make sure the experience feels the same on a Wednesday as it does<br \/>\non a Saturday.<\/p>\n<p style=\"text-align:left;\">Andrew is not shy about that.<\/p>\n<p style=\"text-align:left;\">\u201cDave and Georgia are the reason the food is what it is,\u201d he says. \u201cI\u2019ve worked with Dave for over a decade. There was never a question about who should run the kitchen here.\u201d<\/p>\n<p style=\"text-align:left;\">That trust goes back to Chicago, to kitchens where standards were non\u2013negotiable and reputations were earned quietly. Andrew, Dave, and Georgia all crossed paths at  Graham Elliot, a place that demanded  precision and humility at the same time.<\/p>\n<p style=\"text-align:left;\">\u201cWe all came up in fine dining,\u201d Andrew  says. \u201cThat background shapes everything, even when you\u2019re serving fried chicken.\u201d<\/p>\n<p><img decoding=\"async\" src=\"https:\/\/savannahmadesimple.com\/Magazine\/wp-content\/uploads\/2026\/06\/Brochus_2.jpg\" alt=\"\" style=\"width:100%;\" \/><\/p>\n<h4 style=\"text-align:left; font-weight:bold; color: var(---color-heading-1);\">Why the Bakers Came South<\/h4>\n<p style=\"text-align:left;\">Dave Baker grew up in Sioux Falls, South Dakota. He started bussing tables as a teenager, worked his way onto the line, and eventually chased the pressure that only Chicago can offer. He learned systems,  leadership, and how to run a kitchen  without burning it down emotionally.<\/p>\n<p style=\"text-align:left;\">\u201cI didn\u2019t want chaos anymore,\u201d Dave says. \u201cI wanted consistency. I wanted people to want to come to work.\u201d<\/p>\n<p style=\"text-align:left;\">Georgia Vinzant Baker\u2019s path led through Mississippi and into pastry kitchens that valued technique over nostalgia, even as her instincts stayed rooted in Southern memory. She did not set out to be a pastry chef, but once she moved into it, she never left.<\/p>\n<p style=\"text-align:left;\">Andrew saw something in both of them that mattered more than r\u00e9sum\u00e9s.<\/p>\n<p style=\"text-align:left;\">\u201cThey care,\u201d he says. \u201cThey care about the food, the people, and the room. That\u2019s not something you can teach.\u201d<\/p>\n<p style=\"text-align:left;\">When Andrew decided to open a restaurant in Savannah, bringing the Bakers was never a secondary thought.<\/p>\n<p style=\"text-align:left;\">\u201cThere was no version of this place without them,\u201d he says. \u201cIf they weren\u2019t coming, it wasn\u2019t happening.\u201d<\/p>\n<div class=\"ad_width1\">\n<div class=\"fl-lt ad_width2\">\n<h4 style=\"text-align:left; font-weight:bold; color: var(---color-heading-1);\">Casual Food, Serious Intent<\/h4>\n<p style=\"text-align:left;\">Brochu\u2019s gets described as casual, and that word is accurate, but incomplete. The room  is relaxed. The menu is approachable. You can drink a beer and eat with your hands. But the kitchen runs with fine dining discipline.<\/p>\n<p style=\"text-align:left;\">\u201cCasual doesn\u2019t mean careless,\u201d Andrew says. \u201cThat\u2019s something Dave understands better than anyone.\u201d Dave agrees.<\/p>\n<p style=\"text-align:left;\">\u201cWe still operate like a fine dining  kitchen,\u201d he says. \u201cWe just don\u2019t yell  anymore. The mindset is the same.  The environment is better.\u201d<\/p>\n<p style=\"text-align:left;\">That mindset shows up in dishes that feel familiar but carry depth. It eats thoughtful.<\/p>\n<p style=\"text-align:left;\">\u201cThis food is supposed to feel good,\u201d  Andrew says. \u201cNot intimidating. Not  precious. Just right.\u201d<\/p>\n<div class=\"ad_width1\">\n<div class=\"fl-lt ad_width2\">\n<h4 style=\"text-align:left; font-weight:bold; color: var(---color-heading-1);\">The Quiet Power of Pastry<\/h4>\n<p style=\"text-align:left;\">If the savory menu builds trust, the desserts build loyalty.<\/p>\n<p style=\"text-align:left;\">Georgia\u2019s pastry program is rooted in  recognition. Banana pudding. Strawberry shortcake. Key lime pie that sells out three nights in a row when it appears. \u201cShe  understands memory,\u201d Andrew says.<\/p>\n<p style=\"text-align:left;\">\u201cThat\u2019s rare. A lot of pastry chefs chase  novelty. Georgia chases feeling.\u201d<\/p>\n<p style=\"text-align:left;\">Georgia does not argue.<\/p>\n<p style=\"text-align:left;\">\u201cPeople want things they know,\u201d she says. \u201cThey want dessert to feel comforting.\u201d<\/p>\n<p style=\"text-align:left;\">Her fine dining background shows up in texture and balance, not in spectacle. Her desserts never shout. That\u2019s leadership.\u201d<\/p>\n<h4 style=\"text-align:left; font-weight:bold; color: var(---color-heading-1);\">A Restaurant Built  for Locals<\/h4>\n<p style=\"text-align:left;\">Brochu\u2019s was never designed to announce itself as part of Savannah\u2019s culinary evolution, even though it undeniably is. <\/p>\n<p style=\"text-align:left;\">\u201cThis was always meant to be a neighborhood restaurant,\u201d Andrew says. \u201cThe kind of place people come back to without thinking  about it.\u201d<\/p>\n<p style=\"text-align:left;\">That intention shows in the crowd. Locals. Industry folks. Families. People who are not here to be impressed, but to be fed.<\/p>\n<p style=\"text-align:left;\">Dave sees it every night.<\/p>\n<p style=\"text-align:left;\">\u201cThe support from locals has been huge,\u201d he says. \u201cThat\u2019s what keeps a place alive.\u201d<\/p>\n<h4 style=\"text-align:left; font-weight:bold; color: var(---color-heading-1);\">Why This Story Matters<\/h4>\n<p style=\"text-align:left;\">Brochu\u2019s works because the name on the door does not overshadow the people behind it.
